This recipe is not true barbecue for you purists out there. My barbecue beef ribs are a simple and fast way to cook ribs when you don't have hours to spend over a smoker. This is a style for cooking ribs that my parents always used when I was a kid. Don't get me wrong, I really love smoking meat, but I also really love how these ribs turned out after boiling the meat. They are quick, easy, and very tender.

Boil the ribs for 30 to 45 minutes and to only grill them for about 5 to 10 minutes. At the end of the cooking process, coat the ribs in barbecue sauce, and then pop them on a medium hot grill. Grill the ribs for about 5 minutes on each side, or until the barbecue sauce starts to caramelize on the meat. If you or your guests want more barbecue sauce, wait till the ribs are off the grill and smother the ribs in sauce. This gives you that lovely caramelized flavor, and the delicious smothered tastes of the sauce. Also, make sure your sauce is hot when you serve it. The cold sauce on hot ribs just does not work well.

Homemade Barbecue Sauce


When my parents used to make ribs, my dad would often make homemade barbecue sauce. It was delicious! I asked if he still had that recipe, unfortunately, he doesn't remember it. He said that there are lots of good barbecue sauces on the market these days, so he just doesn't bother with it anymore. I agree, there are a lot of good barbecue sauces out there, Stubbs for example, is one of my favorites, but making your own barbecue sauce is a lot of fun. When you make your own barbecue sauce you can experiment with different styles of sauces. To date, my two favorites are Texas and Carolina style barbecue sauce. Both can be found on page 47 and 48 of my book,Damn Fine Dishes. Both styles are very good. The Texas style barbecue sauce really works well with beef, and chicken, while the Carolina style is really great with pork dishes.

Don't let this technique for barbecue beef ribs fool you, these are really delicious ribs. Give them a try, even if you are a barbecue purist.

How To Cook Beef Ribs

How to make delicious beef ribs finished on the barbecue with your favorite barbecue sauce.

Cook Time 50 minutes

Total Time 50 minutes

Servings 4 people

Calories 642 kcal

  • 1 or 2 lbs beef ribs
  • 1 jar barbecue sauce, or homemade sauce of your choice
  • 1 gallon water
  1. Fill a large pot with water and bring it to a boil.

  2. Once the water is boiling, add the ribs. You may need to cut the ribs to fit them into the pot of water.

  3. Let the water come back up to a boil, then lower the temperature so that it simmers.

  4. Simmer the ribs for 30 to 45 minutes depending on how thick the meat is.

  5. Remove from water and let stand for about 2 minutes to let all the water drip off. You may want to use a paper towel to pat the ribs dry.

  6. Using a barbecue mop or brush, liberally coat the meat with the sauce.

  7. Place on medium to medium high grill for about 5 minutes, turn the meat and cook for another 5 minutes, or until the barbecue sauce becomes caramelized. Remove and add more sauce if desired.

  8. Serve with coleslaw and baked beans.
